I am a big mango fan and this recipe is one of our favorite recipes to make when we have a ripe mango or two. Juicy chicken breast covered in a fresh mango salsa--the whole family will love this perfect meal!

The spices in the chicken and the flavors from the salsa are the perfect combination--so delicious!

Why You Will Love This Chicken with Mango Salsa Recipe:

  • It's so simple to make. Season and bake the chicken-- while you bake the chicken, chop and mix up the mango salsa ingredients. When the chicken is ready, spoon it over top and serve as desired! So easy!
  • Uses simple fresh ingredients. The chicken only needs olive oil, salt, pepper and seasoning. The salsa is a handful of ingredients--minimal ingredients makes it easier to get a meal on the dinner table!
  • The chicken is perfectly juicy. Baking at a higher temperature and a few other tips make for delicious, juicy chicken. This chicken can certainly be grilled or air fried as well if preferred, but it comes out delicious every time! Such amazing flavor and pairs so perfectly with the salsa.
  • A great meal prep option. You can make the mango salsa in advance and season the chicken early in the day and then pop it in the oven just before dinner. You can also make the whole dish on a Sunday when you like to prep for the week and make rice bowls or whatever prepared meals you want set up and ready for the week!
  • Lots of options to serve or vary! The way you serve this dish can easily be varied. I like to serve as rice bowls, a big salad, in tortillas as tacos and more. The cooking method can also vary to meet your needs!

Recipe Ingredients:

  • chicken breast:skinless boneless chicken breast is ideal for this mango salsa chicken recipe. Try to select chicken that is similar in size, approximately 1 inch in thickness. Pound the chicken if the breasts are on the thicker side.
  • olive oil: you can use another cooking oil if preferred, but olive is a great option
  • spices: cumin, chili powder, smoked paprika, oregano, pepper, and salt to taste. You can add some cayenne or crushed red pepper to the seasoning mixture if you prefer a spicy kick to your chicken.
  • mango: you can use frozen if mango is not in season or hard to find but fresh mango is ideal. If you haven't diced a mango before, check out this mango cutting tutorial.
  • red bell pepper:feel free to use another color if you prefer but red bell peppers offer a nice sweetness.
  • onion: red onion is our preference but a white onion will work as well. The addition of color is always great with the red onion!
  • jalapeño pepper: adjust this according to your taste. You can certainly use about half of a pepper or just a touch. I don't find this to be a super spicy mango salsa, but if it's too much for you or the kids, omit it!
  • cilantro: chopped fresh cilantro, feel free to add more!
  • lime: freshly squeezed lime juice as well as a touch of lime zest

Step-By-Step Instructions:

  • Preheat the oven and allow the chicken breast to sit out for about 10-15 minutes to come to room temperature.
  • Pound the chicken to make each breast even thickness if possible. Pat the chicken dry with a paper towel. Brush the olive oil all over the chicken and then season generously with sea salt. Whisk together the seasoning and evenly sprinkle over the chicken. Do this to both sides of the chicken.
  • Bake chicken breasts for about 17-22 minutes or until an internal temperature of 165°F is reached. Time can vary by the thickness of the chicken.

  • While the chicken bakes, chop and toss the salsa ingredients together. Adjust salt or lime juice to taste.
  • When the meat is cooked, let the chicken rest for about 5 minutes before serving, spooning the salsa over top and alongside rice or your favorite sides

Recipe Tips:

  • The main instructions for this recipe is for baking the chicken but other cooking methods will work. The recipe card below also includes air fryer and grilling instructions. Cook your chicken breasts using your favorite method!
  • For best results, use a meat thermometer when cooking this or any chicken. Get out your meat thermometer-- chicken needs to have an internal temperature 165°F.
  • If baking the chicken, you can broil the last couple minutes if preferred. If you want a bit of browning and crispiness to your chicken, turn the oven to broil on high for about the last 2 minutes or so. Just stay close and keep an eye on it as the chicken can start to dry out and become overcooked quickly if left too long.

Storage:

Store chicken an airtight container or wrap in foil or plastic wrap and refrigerate for about 3-4 days. The mango salsa will also keep for the same length of time. You can add an extra squeeze of lime juice before serving any leftover salsa.

The chicken is great frozen as well. Allow it to cool completely and then I like to wrap it and then place in either a freezer bag or container. It will keep for about 3 months.

You can technically freeze the mango salsa although I think it's not nearly as good and the texture is changed once thawed. Before you freeze the salsa, remove any excess liquid from the container. Then freeze for about 3 months.

Serving Suggestions:

Rice is a great option to serve this mango chicken over top. We opt for minute rice a lot but it's also great to pair with a good cilantro lime rice or coconut rice to really up the fame. Making this recipe into a big rice bowl or burrito bowl with diced avocado, an extra squeeze of lime juice and some tortilla chips is our preference.

This cauliflower rice salad is a good dish to serve along side as it has some similar flavors. I always love some spoon-worthy cornbread casserole as well with this dish.

Ingredients

For the Chicken

For the Mango Salsa

  • 2 mangoes, diced (or about 3 c diced mango)
  • 1 red bell pepper diced
  • 1 jalapeño seeded and diced
  • 2 T red onion small diced
  • Juice of 1 lime
  • 1 teaspoon lime zest
  • c cilantro, loosely packed and chopped
  • ¼ teaspoon sea salt

Instructions

  • Preheat oven to 425°F. Place the chicken breasts in a 9X13 baking dish. Pound the chicken to similar thickness (about 1 inch) for even cooking.

  • Brush olive oil on both sides of each chicken breast. Salt as desired and then whisk together the other seasoning and sprinkle evenly on both sides of the chicken.

  • Bake for about 17-22 minutes or until chicken reaches an internal temperature of 165°F. (I have had thicker chicken breasts take much longer so if your chicken is more than an inch in thickness, keep that in mind.)

  • While chicken is baking, toss all salsa ingredients together. Add a touch of cracked pepper as well if desired. Chill until chicken is cooked.

  • When chicken is done, remove from oven, allow to sit for 5 minutes and then serve with a generous spoonful of mango salsa!

  • To Grill the Chicken: preheat your grill to medium high heat. Oil the grates and cook the chicken about 8-10 minutes per side making sure an internal temperature of 165°F is reached

  • To Air Fry the Chicken: Preheat air fryer to 360°F. Oil the basket before adding the chicken. Cook about 8-10 minutes per side.

Notes

  • For best results, use a meat thermometer when cooking this or any chicken. Get out your meat thermometer-- chicken needs to have an internal temperature 165°F.
  • If baking the chicken, you can broil the last couple minutes if preferred. If you want a bit of browning and crispiness to your chicken, turn the oven to broil on high for about the last 2 minutes or so. Just stay close and keep an eye on it as the chicken can start to dry out and become overcooked quickly if left too long.
