Sofia’s Christmas Dinner Soup

They always say the best recipes you ever make are the accidental recipes. The recipes you do without planning on doing them, they then turn out truly amazing and you’re like I must make that again!

One of those recipes for us was our air fryer pull apart bread rolls. We forgot about them, left them for too long in the air fryer and they ended up rising so much that it gave them an amazing wow factor. We then knew to leave them for longer next time and its now one of the most popular air fryer pictures ever with many, many copycats.

Another example of this is Sofia’s Christmas Dinner soup. It was her 2nd Christmas and was Christmas 2015. We had just started Recipe This and using the soup maker a lot.

We had made this delicious Christmas dinner and we were gutted that Sofia wouldn’t be able to enjoy it as she was not into swallowing that many different foods, because she was in lazy toddler phase.

But she loved soup, so what I did on a total whim was put a load of the Christmas dinner (everything from roast turkey to stuffing to pigs in blankets to mash to gravy) into the soup maker and blended it for her.

Tried some on the spoon for her to make sure it wasn’t too hot and OMG it tasted out of this world AMAZING. More and more spoons came out and Dominic and Kyle also tried it and loved it.

Sofia ate every last bit and asked for more.

After that Christmas we shared the recipe on Recipe This and of course, each Christmas I always make a batch of Christmas Day soup. It will then be loaded into the freezer, and we can enjoy Christmas dinner again and again well beyond Christmas and of course it’s a great way to avoid food waste.

Also note, this boxing day soup is also brilliant if you can’t chew foods and want a great way to enjoy Christmas.

What Is Boxing Day Soup?

In the UK the day after Christmas Day is Boxing Day and the idea behind boxing day soup is to make a delicious soup from your Christmas dinner leftovers.

You can literally throw into the soup maker all your Christmas leftovers, blend until smooth, season and serve.

Or you can just do this with part of your leftovers and it’s a great way to deal with your leftovers when you have loads of them and can’t decide what to do.

Leftover Soup For Any Season

When I originally made this leftover soup for Sofia, I had never heard of boxing day soup, that was a totally new thing for me.

I think it was a reader that told me the history behind boxing day turkey soup, though to me it will just be a leftover soup from roast dinner leftovers.

Because it works so well with totally different leftovers you can do the same for Easter, Thanksgiving, Halloween, Mother’s Day, Father’s Day and so many others.

Making Soup With Leftover Roast Dinner

If you are making soup with leftover roast dinner, note there are a few variations that you could do. And of course, you can switch out the meat i.e. swapping turkey for pork or for beef or for chicken or even for lamb.

Smooth Turkey Soup

Because our xmas soup was originally meant for Sofia and to give her some soup she could eat without chewing, it was a smooth turkey soup.

You can of course make it chunky instead, or like us serve it with some of your warmed up Christmas leftovers on top.

Christmas Soup Recipe Ingredients

Leftovers – We are all have different items on our Christmas dinner table and I’m sure yours won’t be identical to ours. With that said, I recommend loading in a bit of everything into the soup maker. More details on that below.

Liquid – You will find if you are using ingredients like mashed potatoes, cauliflower, or roast potatoes your soup will be very thick. Balance that out with some turkey gravy and if you don’t have gravy add in some stock.

Seasoning – We kept our Christmas day soup seasonings simple and went with salt, pepper, parsley, and thyme.

How To Cook A Leftover Boxing Day Soup In The Soup Maker?

  • Load. Dump your leftover Christmas ingredients into the soup maker along with any gravy or stock. Select smooth soup for 30 minutes.
  • Finish. When the soup maker beeps add in your seasonings, give it a quick pulse and then serve into bowls.
  • Serve. Then serve with part baked bread and a few extras from the roast dinner served on top.
  • Serve. Then serve your turkey breast with your turkey gravy and your favourite sides.

And I am sure you can see now how simple and easy it is to cook a leftover Christmas soup in the soup maker and how you can be doing the same.

What Leftovers Did We Use?

In our leftover soup we added:

  • 2 pigs in blankets
  • 1Tbsp mashed potatoes
  • 3Tbsp carrot and swede mash
  • 2Tbsp cauliflower cheese
  • 200g turkey
  • 4 roast potatoes
  • 1 gravy boat
  • Sliced stuffing
  • Plus, 160ml veggie stock

And even better, we cooked everything above using kitchen gadgets making it great for avoiding the oven during Christmas.

Here are some of the Christmas recipes the leftovers came from:

And whilst this came from a full leftover Christmas dinner, you can just make soup from leftover vegetables.

Can You Freeze Boxing Day Soup?

Yes, you can freeze boxing day soup, but if I was freezing it, I would do it differently. That is because you only want to reheat turkey once, and by cooking the soup in the soup maker, then freezing it, then reheating, it ends up being reheated twice.

Instead blend your soup ingredients and add all the seasonings but don’t cook. Then freeze your soup and then reheat in the soup maker.

Ingredients

  • 2 Pigs In Blankets
  • 1 Tbsp Mashed Potatoes
  • 3 Tbsp Carrot & Swede Mash
  • 2 Tbsp Cauliflower Cheese

Instructions

  • Load your leftovers into your soup maker and then also add 240ml/1 Cup of water.

  • Set the soup maker to smooth and then when it beeps add in your seasonings, pulse for a couple of sections and then check the consistency. If too thick add in some extra water or extra stock.

Notes

Size. Note our boxing day soup made enough to feed six of us in freezer portions. It could easily have been made thinner and fed more people. Plus, you might have less leftovers than us.
